My wife’s birthday and mine are eight days apart so our
daughters decided to cook a fabulous meal to celebrate our birthdays. The menu: Filet Mignon with sauté onions, mushrooms,
roasted potatoes and salad and garlic bread of course served with a superb wine
from Girard Winery “2015 Mixed Blacks”.
The preparation is fairly simple, brush each filet with oil and sprinkle
salt and crushed pepper make sure to do both sides. Do this first so the meat can marinate while
you prep and cook the rest of the meal. Next
slice the onions, mushrooms and cut the potatoes in bite size pieces. The potatoes take the longest to cook as soon
as they are cut sprinkle with olive oil, garlic salt I also use Creole
seasoning. This is the time to be creative
anything goes potatoes need lots of seasoning.
Use your hands to toss potatoes make sure you see seasoning on all
pieces and spread on a parchment paper lined cookie sheet bake at 350 for about
one hour. Now add olive oil to two fry
pans place onions in one and mushrooms in the other season both with salt and
pepper. You only need about 15 minutes
to cook the filets so don’t start until all the side dishes are almost
done. Set the oven temp to 475 deg F and
start browning filets in a hot skillet that can be place in the oven. Brown on all side and place pan in the oven. We cooked ours to an internal temperature of
