Red Sauce With Spare Ribs

At TheUpScaleKitchen we are always experimenting with new sauce recipes.  We have made the recipe below a number of times with great success. Remember to taste, taste, taste as you go. Leave a comment below and tell us about your favorite sauce recipe.

TheUpScaleKitchen Red Sauce Recipe With Spare Ribs

1 can Primo Gusto marinara Sauce 6# 9 oz
1 # spare ribs
½ # ground hot sausage
1/3 c. chopped parsley
¼ c pecorino cheese
1 onion chopped
1 rib celery chopped
1 large carrot chopped or shredded
3-5 lg garlic cloves thinly sliced  
6-8 basil leaves course chopped
½ c Paisano wine
½ can water

In olive oil
Brown ribs remove from pot
Brown hot sausage, carrot, celery, onion
Add garlic salt & pepper
Add ribs back to pot
Add sauce and water
Bring to a boil add parsley, cheese, basil and wine simmer ~ 2 hr
Yield 3 ½ quarts sauce
For this base recipe I don’t include the rib meat in the final sauce.  But I have included the meat when I wanted a more meaty sauce.
